Italian Onion & Roquefort Sandwich

Ever in a rut to figure out what to have for dinner?  Well I pulled some sausages out the freezer for dinner and couldn’t figure out what to do with them besides eat them plain per usual, so I went to Google, typed in Italian Sausage recipes, and this is what I got…. this is going to be our dinner tonight!

I also tried to find a recipe that I already had a bunch of the ingredients for – and I happened to have some left over roquefort/blue cheese from New Year’s Eve, and everything else besides the hoagie rolls 🙂

Italian Onion and Roquefort Sandwich

  • 1medium onion, thinly sliced
  • 4oz.Roquefort or blue cheese, crumbled
  • 1/4cup olive oil
  • 2Tbsp.red wine vinegar
  • 1Tbsp.steak sauce
  • 1tsp.chives, minced
  • 1tsp.fresh parsley, chopped
  • 1/2tsp.garlic, minced
  • 1/4tsp.salt
  • 1/4tsp.pepper
  • 1pkg. (19 oz.) Mild Sausage Links
  • 5 hoagie rolls, split
In a bowl, combine the first ten ingredients. Cover and refrigerate for at least 2 hours.
Grill sausage according to package directions. Place one grilled link in each roll; spoon onion and Roquefort dressing over sausage. If desired, grill or broil sandwich for 2-3 minutes or until cheese is melted. Serve warm.
